ORGANOLEPTIC CHARACTERISTICS This Moscato, conceived and vinified in the sparkling version, aims to express the typical aromatic heritage of this ancient vine in the best possible way, preserving the delicacy and subtlety of its original flavours. Therefore, fermentation takes place at a strictly controlled temperature, followed by a second fermentation that must not overpower the carbon dioxide influence, the slenderness and the extreme fragrance of the whole. At first glance, it presents itself in all its effervescent cheerfulness in a beautiful pale straw-yellow colour with light greenish reflections, which at first glance suggest its youth and exuberance. The olfactory examination reveals a remarkable fragrance that is very well integrated and fused with the terpene notes, enhancing its classic and typical citrus scents. The notes of white flowers and musk are also very elegant, which are also a precise reference to the classic varietal characteristics. When drunk, it presents a clear freshness that contrasts perfectly with the sugar and glycerine components. The acidity is emphasised by the fact that in the finish, which is extremely long for a Moscato, the effect of the sugar is almost interrupted to make way for a balanced and very pleasant salivation. PAIRING Not only goes well with classic ready meals (e.g. classic sourdough desserts or fried desserts), but also with cured meats with a good fatty sweetness and a slightly salty flavour, as well as delicate and creamy foams. Primary fermentation takes place in steel at 18°C with selected indigenous yeasts. The part of the red grapes vinified separately and with a short maceration gives the wine this colour and the typical mark, so sought after by the "classic" sparkling wines, of particular fragrance and body. The new wine is kept on the "noble skimmings" for a month, then filtered and racked into autoclaves for fermentation. The refermentation always takes place at 18°C with selected yeasts and lasts about 20/25 days; 40/50 days of ageing on the yeasts follow, then at least 60 days in autoclaves, as regulated. Therefore, fermentation takes place at a strictly controlled temperature, followed by a second fermentation that must not overpower the carbon dioxide influence, the slenderness and the extreme fragrance of the whole. At first glance, it presents itself in all its effervescent cheerfulness in a beautiful pale straw-yellow colour with light greenish reflections, which at first glance suggest its youth and exuberance. The olfactory examination reveals a remarkable fragrance that is very well integrated and fused with the terpene notes, enhancing its classic and typical citrus scents. The notes of white flowers and musk are also very elegant, which are also a precise reference to the classic varietal characteristics. When drunk, it presents a clear freshness that contrasts perfectly with the sugar and glycerine components. The acidity is emphasised by the fact that in the finish, which is extremely long for a Moscato, the effect of the sugar is almost interrupted to make way for a balanced and very pleasant salivation. We are located in Sant Sadurní d'Anoia, the cradle of cava since its creation at the end of the 19th century, in the traditional area known as the "Comtats de Barcelona". The Vall d'Anoia-Foix, bathed by the Mediterranean and protected by the mountains of Montserrat, offers us a unique microclimate on plots of land located between 120 and more than 500 metres above sea level. Respect for the land with 100% organic cultivation and careful hand-picking are the basis for the production of the wines from which our cavas are made.A fresh and soft cava with notes of stone fruit: green apple, peach and nectarine. nectarine. Doña Isabella Garnacha from D.O. Navarra is produced by Bodegas Marqués del Atrio in northern Spain. The Garnacha vines grow under continental conditions with Atlantic and Mediterranean influences on calcareous and clay based soils. Fermentation takes place in temperature controlled stainless steel tanks without oak ageing in order to preserve freshness and varietal definition. In Magnum format the wine evolves more slowly and develops with greater stability over time. The style is fruit driven, marked by clear red berry notes, moderate body and supple tannins. Its fresh structure ensures balance and drinkability, making it well suited to grilled vegetables or uncomplicated Mediterranean meat dishes.
